The Oregon White Truffle (Tuber oregonense) is a winter truffle, with its season falling, typically, December through mid-February.
This truffle, at season’s peak, is savory and sweet with aromatic notes of shallots and a deep nutty, mushroom flavor profile.
As with all Oregon Truffles, its flavors and aromas will deeply infuse butter, cream, or cheese. Try storing Oregon White Truffles with fresh eggs in shell, for wonderful infused omelets. They work very well with starches, such as pasta, rice or potatoes, and fresh vegetables love to be tossed with a little compounded white truffle butter.
